Ok, you have to try this! Lavender-Rosemary Chicken Cooked on a Bed of Salt. The roasted chicken takes on a distinctively delicious flavors when delicately infused with lavender and rosemary. The salt roasts the chicken amazingly.
You need:
a bunch of fresh rosemary,
a bunch of fresh lavender flowers, (save some fresh lavender flowers for garnish).
1 whole chicken,
4-3 medium potatoes/yam
1 big whole garlic,
3 cups of kosher salt
Preheat oven to 425°F.
Place kosher salt in the bottom of a large baking pan.
Place chicken on a raised wire rack.
Arrange the potatoes, herbs, and garlic, around the chicken.
Roast chicken for 1-1:30 hours until fully golden, flipped chicken if needed.
